SmokeHouse Melt Recipe + Giveaway from Big Bear's Wife



I love a good recipe, and this afternoon, I found one thanks to Big Bears Wife, a blog full of recipes, crafts, and everyday tips.

I'm not sure if I'm mentioned this but if my Bacon Butty post is any indication, I ❤ bacon! It's one of those perfect foods that you can use for just about anything, as demonstrated by the fact that IHOP used it in an ice cream sundae. This recipe has the best of everything - bacon, cheese, chicken, and BBQ sauce!

Like me, BBW likes to re-create restaurant-style recipes in her own kitchen. Believe me, it's a great way to get better at cooking and it saves $$. So here's her recipe for the SmokeHouse Melt.

(Quantity depend on how many people you are feeding, we were feeding 2)

2 Skinless boneless chicken breast
4 strips of bacon, plus 1/4 cup crumbled bacon
4 slices of cheddar cheese (or enough to cover the top of chicken) (I bought a block and sliced on pieces)
1/2 cup BBQ Sauce

What to do:

Grill the chicken or bake it until it is done. (Season with salt and pepper if desired)

We used our George Foreman grill to grill our chicken.

Turn the broiler on for your oven.

Next Place chicken on a baking sheet. Using a spoon or a basting brush, brush BBQ onto each chicken breast.

Place 2 strips of bacon like an "X" on top of the BBQ sauced chicken.

Lay slices of cheese over the top of the bacon "X". Sprinkle with Bacon crumbles.

Place under broiler in oven for about 5 minutes or until the cheese is melted.

Remove from broiler. 

BBW served her SmokeHouse Melt w/ her own recipe Portabello Mushroom Fries. To me, that would be a great combination during the cold winter months when you want some warm, hearty, stick-to-your-ribs fare. During the summer when I'm eating BBQ anything, I like pasta salads, like my mom's macaroni salad (made from my grandmother's recipe) or a variation of antipasto.
