Lazy Meatloaf Recipe

Once in a while, my boyfriend and I babysit his nephews, and I like to give them more than pasta or takeout pizza. Tonight I made them what I call Lazy Meatloaf. it's something you can prepare and bake all within an hour! Plus, it's incredibly simple. This recipe is great for beginner cooks.

Lazy Meatloaf

1 box Stove Top stuffing mix (for tonight I used Savory Herb flavor)
1 c. hot water
1 lb. ground turkey
Pinch of salt
Pinch of pepper

Preheat oven to 375° F. Cover a cookie sheet with aluminum foil. Spray with non-stick cooking spray (unless your foil is already the non-stick brand).

Mix stuffing + water with a wooden spoon until well blended.

Add ground turkey and mix thoroughly until it can be formed into a ball.

Place ball in center of cookie sheet and push down the top with mixing spoon to flatten it out.

Once oven is pre-heated, place cookie sheet in center rack and bake for 40 minutes.

Serve with a sauce made from a mix of brown sugar + ketchup (add as much of these two together as you'd like depending on how sweet/tangy you'd like it). Heat sauce in microwave for 15-30 seconds. (You can also serve with steak sauce or BBQ sauce depending on your preference.)

This is the finished product straight from the oven:
